Mom once made me go into the backyard with a stick to drive away a 'possum. I'm like, what the hell? You want me to poke a 'possum with a stick? No! Those things have sharp teeth, and maybe leprosy or something.
Anyway. Don't poke 'possums with sticks. They aren't hurting anything and they'll go away on their own, eventually.
Raccoons, on the other hand, are right bastards. The best way to deal with them is to catch them by surprise. They panic in the most hilarious ways.
Please don't hurt them, though. Don't feed them either. They're just as destructive as they are adorable.

There are a lot of "standard" American foods that people claim to not like, but only because they've only had the school cafeteria versions of those foods. Chicken and Dumplings is one example.
The version served in school cafeterias, available in the canned food aisle at your grocery store, or the stuff served in all too many chain restaurants is flavorless mush compared to its Southern cooking roots. Properly prepared, its blandness belies its complex and rich flavors.
