      I also get a rice cracker flavored with soy sauce, and topped with cheese. Anything with soy sauce and rice is a core base flavor for me

      when i go to 'non-ethnic' grocery stores, i am rarely interested in the snacks there beyond 1-2 things. all the flavors are wrong to me. salt and vinegar? extremely sour potato chips? no thanks.

      british / irish crisps are a little better for me, the flavors are more to my taste. much more savory flavors.

      i think i just objective to vinegar as a core flavor. also why i can't do hot sauce in America.

      @skinnylatte Salt & vinegar is a relatively recent addition to US chip choices (probably came in around 2000, 2010?). I actually think of it as more British.

      @skinnylatte on multiple occasions, i have been yelled at by an entire social group for not bringing enough bags of salt & vinegar chips to a party or campout also heavily featuring dill pickles and pepperoncini. exactly one guess as to what nationality the majority of us are.

        It’s 5.20am so I’m researching crisp flavours. So far I’ve learned that Tayto (Free Stayto) launched the first flavoured crisp in 1954, Cheese and Onion. Previously, all was salt. Tudor (owned by Smiths) launched Salt and Vinegar in 1967. What I wanted to know was when smokey bacon crisps were introduced. I’m guessing the 1970s.       @meganL @Andres4NY Thailand Lays has a 2 in 1 potato chip: half the flavors taste like grilled shrimp, the other half like seafood sauce. I'm a fan and find a lot of the US flavors kind of boring. I would be fine if I could have a decent classic one that was just good quality and not just filler.

      Irvins salted egg chips are a pretty recent invention (I used to go to their restaurant, where they made salted egg crab dishes, before they found the jackpot with the snacks)

      But basically stuff like that: extreme umami is what I like in my snacks. I also like the delicious curry leaf flavor that reminds me of a lot of dishes from home.

      For standard crisps, I discovered NZ's Proper Crisps when I was visiting and I really like very basic and good classic crisps like that.

      I get most of my snacks from Asian and Mexican grocery stores. When I go to TJ's or or Safeway or Whole Foods, zero of the flavors speak to me. Well maybe the Irish blue cheese crisps that TJ's sometimes has.

      Speaking of Asian potato chips, Wise Cottage Fries (Tomato Ketchup flavor) are a classic! They are my favorite since childhood, and the tomato powder is chock full of glutamate–the umami that you crave.

      @skinnylatte Your post made me think about a parallel idea (maybe conspiracy theory :P ) about American food culture:

      The people who use it don't love the *heat* they love how the vinegar in the sauce brightens the flavors.

      It's a shame that it then gets stapled on to so many things as *the flavor* and not an ingredient that can improve your cooking.

      @skinnylatte I’m sure you will have an opinion about the brand and the actual flavor, but in recent years my favorite “chips” have been the Golden Duck Tom Yum ones not only because of the flavor but because they use lotus root. Didn’t leave a single crumb in the bag.

      @august oh yeah the Filipino thing with vinegar is pretty great. I tolerate that flavor profile when it is Filipino or Mexican but very rarely like it when it’s anything else. (Fried pork ribs with garlic vinegar adobo sauce)
