Keeping "religion" separated from "ethnicity" is a good thing, it reduces power from the Israel religious ethno-nationalist propaganda.
Israelis want Ashkenazi, Sephardi and Mizrahi to believe they are all "Jews" no matter their current religion. This is a smart strategy to "capture" their origin mindset to Jewish religion and Israel as homelands.
It's the same principle of "Roman". What's a Roman? I'm not sharing any oxygen with French people, I'm definitively different than Germanic nations. And they were all once Roman Catholics from the Roman Empire.
The "origin" question is stupid and a violent attempt to "claim people", some cultural/linguistic distances are far enough to say two groups are not the same. Just ask the Balkans, maybe Baltics people too.
Said that, Ashkenazi, Mizrahi, etc are not entitled to say "native to the land" at the Palestine region, they are way too different people since old Judea people, after a millennia living and forming modern Europe and Africa.
They are at best "colonizers" to the region, Israel shares no single cultural trait with their neighbors.
Palestinians in other hand, are mostly "the same people" from old Roman Judea, old Hellenistic Palestine, people who mostly converted to Islam during the Umayyad, Abbasid, Mamluks and Ottoman rule, adopting their culture.
