I had a look and it seems that you have to have a good reason to carry pepper spray for defense in Japan and you must carry it openly. So it would be up to the discretion of any responding authority to determine if you were justified/had a valid reason.

Can you not have pepper spray in the woods in Japan? Seems like a simple nonlethal way to defend against animal attack.
