    Don't use a premade mix. Make your own mix. It's not hard. Flour, baking soda, baking powder, salt, sugar.

    Don't ruin it trying to make protein pancakes. Those are for you. Give the kids that raw uncut puro.

    Whip the egg whites separately! Game changer.

      @mekkaokereke but then pretty soon you get into the hard core stuff. Adding fruits, nuts, fancy jams, pretty soon you’re looking at waffle makers.

      @mekkaokereke The go a step further and do the buttermilk pancakes from scratch. Just the same as regular, but use buttermilk. Don’t have it on hand? Make it by diluting Greek yogurt.

      @mekkaokereke my preferred pancakes do use mix but it's a good mix from an actual factual windmill from my hometown with whole grain & buckwheat goodness. Add a lil' vanilla sugar. 'S nice.

      💯 Every Sunday night is pancakes night in my house. For downsizing purposes, I once tried switching to a mix so I wouldn’t have to stock all those ingredients. The kid wouldn’t have it; I had to go back to the real kind.

      Toss some vanilla and apple pie spice into the mix; it really elevates your pancakes.

      Some good ones are! But some add a whole bunch of extra ingredients.

      But even with the mostly natural ready mixes, there's a problem in that salt and baking soda last pretty much forever, flour last for a long time, but baking powder goes bad after a few months. So all mixed up together, is only as good as the weakest link: the baking powder part.

      If you mix your own, as long as you're using fresh baking powder every few months, you get higher quality pancakes.

      @mekkaokereke making pancakes for my daughters was something I looked forward to every weekend for many years. I still like to spoil them now even as adults when they come over, however, they prefer chilaquiles over pancakes.

      @mekkaokereke There's a lot you *could* do to make it more fancy, but if you can do the basic pancake, you've done plenty.

      "Yes, but it's just a basic pancake!" -- yes, exactly. I'd eat 10 of those and be happy about it.

      Your kids, too. Well, maybe not 10.

      But they're not going "Oh no, you didn't use the right flour!" or "Why didn't you use cane sugar?"

      Basic pancakes are GOOD, okay?

      My recipe fits in a toot with room to spare.
      1. 2 eggs, 2 tsp brown sugar, 2 tbsp veg oil. Whisk ’em up.
      2. 2 c milk, 2 c flour. Mix. Opinions vary as to which goes in first. People say don’t mix too much, I don’t find it makes much difference.
      3. 3 tsp baking powder. You’re done. Leave the batter a few minutes.
      4. *Must* cook them on a cast-iron surface with butter. You won't get the burner level dialed in right until you've done a couple batches.

      Oddly enough, I can't make pancakes from scratch anymore, because it appears you can no longer buy baking powder that doesn't contain corn, and I'm allergic to corn.

      I can use the gluten-free pancake mix from King Arthur, so at least I can make some pancakes.

      Oh no!

      You probably know this already, but just in case it's useful to you or others: You can make your own corn free baking powder! Baking powder is 3 ingredients that work together:

      1) I make bubbles when I touch acid!
      2) I make bubbles when I'm heated up!
      3) I absorb moisture!

      Regular baking powder uses baking soda for 1) cream of tartar for 2), and corn starch for 3). You can mix up your own by substituting arrowroot for 3)

      Both makes it better.

      Baking powder is:

      1) Bubbles when I touch acid (baking soda)
      2) Bubbles when I get hot (cream of tartar)
      3) Anti caking agent.

      The proportion of baking soda to baking powder is not ideal for the fluffiest pancakes, so boosting with more baking soda helps.

      More baking soda also helps with maillard reaction (golden brown texture).

      There is is a difference between baking powder and baking soda?
      I thought that the German term "Backpulver" (Back Pulver is literally translated baking powder) was baking soda 🙃, chemically been something carbonate*)

      Now I'm puzzled🤔

      Update: looked it up and everything is fine again 😅

      Baking powder is a mixture of a carbonate or bicarbonate. baking soda (Sodium bicarbonate) is a common ingredient of baking powder

      @mekkaokereke Pancakes and waffles are now my 18 year old's wheelhouse. He will treat us to breakfast for dinner every so often.

      It was a more frequent occurrence when his now-9-year-old sister was little. Then one time I made pancakes for actual breakfast, and she was extremely confused -- why were we having dinner for breakfast?!?!

      @mekkaokereke Adam Ragusea has a few videos that are very helpful here! Helps to see the technique in action.

      I don't have kids but my gf is a culinary school grad and pancakes are one of the few things she always complains that she *can't* cook well. So I had to figure something out there. I mostly do them as dessert -- use a blend of almond flour and cake flour, both butter and oil in the pan, mix in some crushed almonds, hazlenuts, and macadademia nuts...then slap a thin layer of nutella between two of those and a scoop of vanilla ice cream on top :)

      @admin @mekkaokereke my move is the Tassajara recipe (100% whole wheat flour, egg whites separated and whipped to stiff peaks then folded in) with frozen wild blueberries (small so they don't create big cavities in the pancake, and the cold keeps the batter from going flat before you reach the end of the batch) and a dash of cinnamon inside.

      @mekkaokereke while people are talking about flapjacks and crepes, I gotta represent for swedish pancakes. They sit somewhere in-between: thin, fluffy, absolutely loaded with butter. Look harder to do than they really are. Just use strawberry jam if you don't have a source for lingonberries.

      One of my faves!

      I like to roll them up, place like 3 on a plate next to each other, dust them with powdered sugar, then drizzle fresh real maple syrup from height in a back and forth motion to make thin beads of syrup kinda Zorro'd across, then place fresh raspberries and garnish with a mint leaf!

      Grown up pancakes! Makes me feel all fancy!

      @mekkaokereke when my kids were younger we used to have weekly pancakes. We got creative with the toppings, because I wasn't so keen on just pouring sugar (maple syrup) over them. Some things we used to do: stewed apple (great way to use up aging wrinkly apples), sliced banana with desiccated coconut, stonefruit or berry compote, and ricotta with brown sugar, lemon juice and vanilla.
      Anyone else have suggestions for toppings?

      @timbray @mekkaokereke I like to use melted butter in place of oil. But then I use oil on a steel griddle instead of butter. I also recommend frozen blueberries, rinsed to thaw and then distribute once batter is poured. For a while I made this every Saturday morning plus bacon.

      Belated, I know, but thank you for sharing that with me! I tried it in some muffins and it works much better than the previous mixture I had used, which for some reason used salt where this one uses starch.

      I didn't have any arrowroot so I substituted cassava and that worked.
