@feld @dictatordave Teflon itself is a large and stable enough molecule when polymerized that it doesn't react with much of anything, being already fully oxidized. Nitrates get reduced to nitric oxide in the stomach which in turn become nitric acid, which can start to decompose Teflon (and other fluoropolymers) into their constituent mers, such as PFOA and PFAs, that then go on to wreak carcinogenic havok. There are other methods of action but that's the main one associated with Teflon cookware.
