I'm so grateful for Mujaddara as a food, that you can make it in the rice cooker so easily, that it is cheap, that it is delicious, that it is filling, that it is versatile, that it is consistently good

Here is how to make Mujaddara in the rice cooker:
Make the lentils and rice:
- Add one cup rice
- Add one cup lentils
- Add three cups of water
- Add half a teaspoon of salt
- Turn rice cooker onTop with fried onions and yogurt. Use hot sauce if you like.
That's all! Hard to get cheaper, more delicious, easier.

Sometimes @cwebber makes a giant batch of it to keep in the fridge and we play around with different fried/sauteed vegitables on top. I also add cheese.

Variants:
- Use can of prefried onions. Not as healthy but makes this effortless.
- Top with steamed sweet potato.
- The @mlemweb special: no fried onions, melt cheese on top.
- Fry the onion in spices, like garam masala, or really anything.
- Top with tomato sauce, or any other sauce.
- Have pasta and tomato sauce sitting in the fridge and *also* have leftover Mujaddara? Combine and get Kushara, Egypt's national dish! -

@stooge you can add so much more flavor, though it has a surprising amount made minimally.

@cwebber Ahhh ok fair. I will have to try it. So just plain yogurt or is that a kind of sauce I should look up? Sounds healthy and i might like it thanks.

@sergedroz brown, typically! all of them work well but the amount of water varies. brown are most common and typically cheapest and tbh my preference

@cwebber @mlemweb Just tried this! The 3c of water was too much for my cooker, but I should’ve known better 😬 anyway it ended up coming out really mushy, but I’m not picky so that’s fine for a first attempt.
I sautéed some onion with chili powder and other spices I had lying around in my pantry, and then I threw in some leftover vegan beef ground. All around, really good! I’m so glad you recommended this.

@LandoDev @mlemweb Sorry it ended up being a bit too much! If you're using an electric pressure cooker it's def more water than you need. I think 3 cups works pretty well if you have one that has a lot of ventilation

@LandoDev @mlemweb Also I have a tendency to open it a few times during cooking to check on things which tends to let out a lot of moisture

It seems people got really into the rice cooker mujaddara, which is great. What to do with leftovers?
This is what I call "lazy half-koshary":
- Chop and saute an onion in olive oil
- Add your leftover mujaddara to pan
- Add some pasta sauce, the same amount you would add to noodles
- Add canned chickpeas if you've got them
- Add some spices, especially curry powder and/or garam masala
- Saute in pan until heated all together
- Done! -

In fact if you add pasta, it's full Koshary, it's just.... I only do that if I already have the pasta cooked, otherwise I am too lazy for that

I’m not sure if this is genius or should be reported to The Hague.

@cwebber I'm making this quite often and I did not know this was a dish that existed outside of my lazyness.
Will try the variants, they sound delicious. Thank you :)

@mlemweb @cwebber this post popped by my timeline 3 days ago and i’ve since tried it twice and enjoyed it both times. thank you both!
first time: rice+brown lentils+couple of cloves of lightly fried garlic. fried garlic+onions with some cumin. served with yoghurt + freshly chopped mint.
felt it could do with a little more flavour; basically everyone added hot sauce (but enjoyed it!)
second time (today): rice+red lentils+couple of cloves of lightly fried garlic+vegetable stock. fried garlic+onions with some spicy paprika, garram masala and cayene pepper. served with yoghurt again. also fried up some leftover schnitzel-substitute to top.
i loved this one. i think three cups of water was actually a little too little with this combo, probably because red lentils are denser. what came out of the rice cooker actually had a texture a bit like the mashed potato on top of a shepherds pie. it felt very different from our usual fare and very flavourfiul. will definitely cook again.
