@skinnylatte@nihilistnomya I have super fond memories of a meal in Madurai - so many things, soft soft idlis, kotthu paratha, but most of all an incredible crab "omelette" - kid2 was 8 or so then, she asked for and we got more, as she kept eating, tears rolling down her cheeks. Aah good times

Dong Po (or Kakuni) style pork belly lunch many days in the making (well started with breaking down, portioning and setting up last week Sunday). Blanched with ginger and scallion, marinated in (light + dark) soy, sake, ginger scallions and a bit of rock sugar; 76 ⁰C sour vide for 16 hrs, then put away. Saved one pack for today, froze the others, the gelatin in the bag made a super stock. Steamed to warm through and enjoyed with rice
@skinnylatte oh thanks for that YT link. I've seen a lot of that yeast here in the Chinese/Asian stores too. I think you mean used to make, not made with fermented rice wine. I bought some a while ago and tried once not very successfully to make amazake type fermented rice. Probably because I didn't do ratios and temp right. Switched to koji for amazake - and that turn out well.

If you haven't thawed your turkey yet, no worries. You can't brine it, but you can cook straight from frozen - at about 325 °F, it will take longer than a thawed 🦃, about 6hrs for 18-20 lb.
