Exactly, Z wasn't going to give away his minerals for nothing. And there are no "security guarantees" Trump could offer that are worth anything.

So, why else would he go ...other than to take the massive public display that the meeting offered and use it to unmask Trump (in a way to force European leaders' hands)?

I think Zalensky knew it was a trap and went to spring it (not for some insane mineral deal).

By springing the trap, he now forces the European countries to pick a side. And they know it must be Ukraine (well, except those like Orban already in Russia's orbit).

Z definitively crushed the Macron/Starmer appeasement approach that could only end badly. Today starts the beginning of the post-NATO European defense. Z is playing high-stakes for keeps.
