Umm... The majority of Japan, Taiwan, and multiple South East Asian countries?

Tofu isn't created as a vegetarian diet to start with, mostly it is the Western countries making it so.

They are more akin to cheese in Asia due to the lack of dairy diet.

Goat cheese doesn't melt like other cheese, you can dice and add them into other cheese based dish for added texture and flavour.
Or just on top of salad, I can't think of anything easier.
