      @skinnylatte ha my wife and I were literally talking this morning about how boring (her words) northern chinese food is - "it's just jiao this and jiao that and some noodles" 😆

      @ada black bean noodles is a northern Chinese dish. Northern Chinese food is quite simple, a lot of wheat and meat and vinegar. Southern Chinese food is more rice based. When we have noodles at all it tastes more complex to me with more than one source of umami, and more seafood. Korean black bean noodles are based on the northern Chinese style but totally its own thing. Kind of thicker and sweeter

      @ada I pretty much made a fusion southern dish by adding an egg and chillies and anchovies. It’s mixed with a Hakka dish called ‘chilli pan mee’. The noodles are the same
