An interesting take on Tomato (and apple) Kasundi. I am not sure it is really "Kasundi" but nevertheless it sounds good!
@seanbala It is not bad, but very few features eg muting hashtags has only just been introduced. It is more twitter-like than here. I prefer here, but there is some info more readily available there, like local news and events. Apparently it is still under development, but it is very slow on having features released. One has to wonder if his heart is in it.
But it is better than Threads.
I am noticing that not many people (that i have come across) on BlueSky put alt text on images. Here, most people I follow add it, and it makes for a richer experience. Often little gems are hidden in the alt text.

Roast Mushrooms with Burrata (and there were baked Toast Soldiers)
Roast Mushrooms - a breakfast of champions. These mushrooms are perfect for the morning meal, for brunch, as a first course later in the day or as a BBQ in the evening. Spiced oil is spooned into large mushrooms which are then roasted before some creamy burrata is placed on the warm mushrooms. I know that you will love this dish, especially if you like egg-free breakfasts.
The idea for this dish comes from #Ottolenghi’s #Simple. He tosses sliced mushrooms in the oil before roasting them, but I have a love of whole roasted mushrooms. The oil mix he uses is pure genius! As we do not eat eggs, I make our usual stunning substitution – burrata. Its outer layer has the texture of cooked eggwhite and the inside is soft and creamy.

HORSE GRAM RASAM
I often mention horse gram as it is one of my favourite lentils. I love it for the deepness of the broth it produces when cooked, and you can see this in the pic.
Horse Gram (aka Kulthi Bean) really should be the next superfood. It is rich in nutrients and its many positive effects on the body. They say that it clears the throat and the sinuses which is why it is very comforting if you have a cold or cough. It is also so flavoursome that just adding pepper and salt to the water that horse gram is cooked in, and drinking it every day will provide nutritional benefits and might even help to to shed weight. So they say.
It is easily purchased in Indian shops.
The beauty of rasam is that it can be as simple as water simmered with tamarind and spices, or as heady as lentil based tomato rasam with lots of spices and a small amount of vegetables.
This Rasam uses both the horse gram lentils and the cooking water, but you can just use the cooking water and use the drained lentils to make a sundal.

My first meal in India outside of a hotel, on my first trip.
It's a hot day, and it is nearly at the forecast max of 35C. (It will go higher I am sure.) So it is mango lassi time. I've just taken the mango that I cut up a week or so ago out of the freezer - it needs to defrost for 10 so I can break the block in half. Then mango + yoghurt + a little water + a little sugar + cardamom + blender (+ice if you need it, lessen water if you do) = mango lassi.
I still have some batter, so it was Uttapam again (I could make idli or dosa or paniyaram, but it is Uttapam I am craving atm.)
This one has a lot going on in the topping - onion, chilli, tomatoes, zucchini, coriander leaves, and more. Some pics you see in books only put the topping on after the uttapam is cooked. I like to squish it on top of the batter, so when the U gets flipped it cooks as well. Honestly, they are delicious.
A little indian roast tomato chutney on the side.

Matar Pulao - Rice Pulao with Peas
When rice forms a major part of a cuisine then there are infinite recipes using rice. Contrast this with cuisines in which it isn’t so important.
When growing up, rice was used mainly for rice pudding and an even rarer rice salad. Apart from that it was unusual to have rice with a meal. I guess my mother bought rice only when she wanted to make a pudding – whereas I keep the pantry stocked with several different types of rice. Sticky rice, black and/or red rice, basmati, short grain rice, risotto rice and perhaps pongal rice are fairly standard pantry items.
These days I love rice cooked with spices and a vegetable or with lentils. It forms a great addition to any meal, especially Indian meals. It is also a great way to use up any vegetables sitting at the bottom of the fridge on a Friday night – prior to doing the next week’s shopping.
Peas Pulao or Matar Pulao is a popular dish which is made especially during the cooler months in northern parts of India.
It can be made in a pressure cooker or rice cooker as well as stove top.
