I get frustrated when someone from India, a country that has one of the most diverse cuisines globally, says *THIS* is the way to cook Indian food. Sigh,
So this article is rather frustrating to me, but might be helpful to others. It targets North Indian gravy-style dishes (as tho they represent ALL Indian food 😬 ) . Proteins can be paneer or tofu, or veg such as okra, eggplant, potatoes, etc.
Also know that many Indian restaurants outside India, and especially BIR, make all their dishes with just a couple of bases - so if you order 3 or 4 different dishes, they might be all the same except for the key ingredient. So depressing.
But there might be hints here that are helpful. Just remember that it is only one of thousands of cooking styles in India.
