Piperade recipe made with firm-soft tofu instead of eggs. Quite delicious. It is photographed in the pan, and looks very much like yellow scrambled eggs with tomatoes, capsicum, celery and parsley. The real thing has more tomatoes and capsicums in ratio to the eggs. Nevertheless, still delicious.
