Sounds almost like an Asian chicken fricassee. I make a mean chicken fricassee. Made it every Tuesday for one whole summer till I got it down. Boiled all my own chicken broth etc. as well (which I cooked the rice in too). Home cooking is the best, and it's satisfying to learn a dish.
