     What? You can't configure discord like Chrome at all. You can use unjewgled chromium, and have no data collection, there is no way to configure discord to NOT collect data.

     Discord Program is a dedicated browser, so Discord can collect data it couldn't inside of chrome.

     I'm sure even the most permissive web browser like Chrome default will still permit less data collection than a Windows version of Discord.
     
     Windows has very little in the way of restrictions. Browsers are restrictive by nature.
