@madison @justnormalkorean This reminds me of when I asked my Chinese friend if he knew how to make fried rice and then he feigned extreme offense for a minute before cracking up laughing said "OF COURSE I KNOW HOW TO MAKE FRIED RICE! I'M CHINESE! 😂" and he shared his recipe.
      Ancient Chinese secret:
      >wash and soak rice to remove extra starch so it cooks better. Use cold rice so the starches recrystallize for proper consistency when frying.

@VolkischWoman @madison @tyler @justnormalkorean I do jasmine rice in my instant pot using 1:1 rice to water and it cooks perfectly doing 2 cups of rice at a time.
      >high pressure, 3 minutes (takes a few to get there).
      >natural release for 10 minutes. Sometimes I go longer if I forget, this doesn't seem to matter.
      >quick release and stir

I never have issues with it and I don't pre rinse my rice usually.

@madison @tyler If you're using a rice cooker it stops cooking automatically which is why they're perfect for white people. If you're using a pot a bit under 20 minutes. When I use an instant pot I press the rice button and cook it for like 12 minutes. It kinda depends on what rice you're cooking and your elevation as well.

You can use pressure cooker without the weight too. For jasmine rice it's a 1:3 ratio rice to water. Close the lid, leave the valve open (don't use a weight). Bring to a full boil to build up a lot of steam and then turn then burner off and let sit for 20-25 minutes. Perfect every time. I don't know about the short grain though, sorry.

@madison @tyler Oh you're making it too wet. You only need enough water so when you fill it up it goes up to the first knuckle when you put your finger tip level with the rice.

@Dudebro @madison @tyler Rinse your rice in a pot until the water isn't cloudy. Takes me a few times to fill it and swish my hands through it and then drain it of excess water until it's fairly clear. The only time you don't wanna do this is when you're making risotto or palella.

The rice she makes doesn't feel like it's cooked all the way through. She's done it right many times before, so it's weird.

The centers often feel a bit firm, but not 'hard' - they feel undercooked

@madison @Dudebro @tyler @dia Oh congrats! Rice cookers generally don't get much bigger than 2 QTs unless you want the expensive ones. This brand has one in 1 liter and 10 cups sizes, but they're like $250. Might be cheaper just to get a second $30 one.

@ThisFuckinGuy @Dudebro @madison @tyler @1137 @dia The interesting thing about bulgogi is that it's not even citric acid that's breaking down the beef as much as you'd think. It's an enzyme called calpain that's found in Asian pears, kiwis, and pineapples.

@justnormalkorean @ThisFuckinGuy @Dudebro @madison @tyler @dia the bulgogi I have had in the USA is too sweet, with a few authentic exceptions. It would not have been acceptable in Korea when I lived there, but I understand they are chasing a different set of customers. Also, using citric acid (kiwi works well) to soften the beef is not well known here, and it allows you to cut way back on the sugar.

It tastes like off sugar. Its fine. I don't think replacing it with any other sweet would be a giant deal.

In the US we almost exclusively use brown sugar in Asian dishes so its either compatible or our pallets should be used to the association

@Dudebro @madison @tyler @1137 @dia I've never had palm sugar knowingly so I'm not sure what the flavor profile is. If it was in the pad thai I've had I honestly couldn't tell what it tasted like. Brown sugar sounds like a good sub though.

My favorite meal is Pad Thai. I've made several recipes and visited the sketchy international food store to get all the various sauces and spices. It never tastes right so when I have a night off from cooking, I always get us asian food.

@VolkischWoman @madison @tyler @justnormalkorean I've bought rice from Aldi and Trader Joe's and it's always good. The best bang for the buck is finding a Chinese grocer where you can buy the 50lb+ fabric sacs of rice. They definitely need to be frozen or washed to get the beetles out though.

this is a big one and they do make a larger one. Someone brought up black and Decker and I used to use that until we wore out the nonstick. it lasted 6 years and was cheap and we make rice regularly. They make a 28 cup (cooked) model for cheap but who knows if it will last.
