Ancient Chinese secret:
>wash and soak rice to remove extra starch so it cooks better. Use cold rice so the starches recrystallize for proper consistency when frying. -

>high pressure, 3 minutes (takes a few to get there).
>natural release for 10 minutes. Sometimes I go longer if I forget, this doesn't seem to matter.
>quick release and stir
I never have issues with it and I don't pre rinse my rice usually. -

If you're using a pot a bit under 20 minutes. When I use an instant pot I press the rice button and cook it for like 12 minutes. It kinda depends on what rice you're cooking and your elevation as well. -

For jasmine rice it's a 1:3 ratio rice to water. Close the lid, leave the valve open (don't use a weight). Bring to a full boil to build up a lot of steam and then turn then burner off and let sit for 20-25 minutes. Perfect every time. I don't know about the short grain though, sorry. -

Takes me a few times to fill it and swish my hands through it and then drain it of excess water until it's fairly clear. The only time you don't wanna do this is when you're making risotto or palella. -

It would not have been acceptable in Korea when I lived there, but I understand they are chasing a different set of customers. this is a big one and they do make a larger one. Someone brought up black and Decker and I used to use that until we wore out the nonstick. it lasted 6 years and was cheap and we make rice regularly. They make a 28 cup (cooked) model for cheap but who knows if it will last.
