Al wijst Joosten ook op een meer ideëel motief. "Tien miljard mensen op de wereld, hoe ga je die straks voeden? Dat wordt een probleem.   Jarenlang maakte Boermarke in Enschede naam als traditionele zuivelfabriek. Vla, yoghurt, ijs. Maar het Twentse familiebedrijf maakt de radicale keuze voor honderd procent plantaardig. In 2027 moeten de laatste dierlijke producten uit de fabriek verdwenen zijn. "Nu we plantaardig zijn, zijn we een grote speler op Europees niveau."
