Not gonna lie I like cute anime characters doing cute things so that's the main appeal.
But what I like most about Hololive is the songs and music videos. They've produced hundreds of absolutely banger songs over the past 8 years that even regular fans of Japanese music would like.
As for the streams I tend to watch the JP streams mostly because I think they are very good methods for immersive language learning.
I like watching anime too, but my Japanese level isn't good enough to understand what the fuck is going on without subtitles. But you also don't really learn anything watching anime with subtitles on.
Watching JP vtuber streams isn't really as frustrating as watching anime without subs. The language used in these streams is in general either simple to understand and very conversational. And usually you can understand what is going on from context alone, even if you don't fully understand every sentence or word that they are saying. I really find it to be a great learning tool.
As for EN streams I usually don't really care. Most of them are boring. One EN stream that I enjoyed recently was ERB's Undertale stream, because she is really good at voice acting and gave every character in that game a really good and unique voice.
