Even ignoring the obvious problem of eye and brain development, which I do consider small obstacles of "random" progress. We run into highly dependent systems in existence with other existing complex systems. There is a worm on the ocean floor borrows the stinging cells from other forms of life forms for its own natural defenses. There are octopi, which can through no discernible process we can understand replicate, perfectly, the surrounding environment. There are entire breeds of birds, which exist wholly based upon the depth of a flower's "cup." Too the point their tongues are the exact same length as it. While I do not like championing the "ignorant" position. I do not feel that is the case when the "educated" one is a glorified, and obviously wrong assumption.
