The sun looks yellow because of the contrast with the blue sky, we have red/green cones and blue/yellow cones, the sky is blue. And there's a trend in education to move from figurative to extremely literal: you can't call a whale a fish without people thinking you mean literal biology rather than "finned thing in the ocean", they pop in "ACTUALLY IT IS A MAMMAL", right. So "Actually, the sun isn't yellow." And sure, it does technically emit white light, but it looks yellow.
