I feel like brunch places should be up front about whether they overcook the eggs or undercook the eggs because people who like one or the other can’t stand the other version (I hate overcooked eggs, give me a slimy under-cooked one please)
@skinnylatte i can't believe how many ways people can fuss over eggs. Fried, basted, poached, over easy, soft boiled, hard boiled, sunny side up, the list goes on and on. I couldn't care less, as long as it's cooked and there's anything resembling hot sauce handy.
@hyc I actually enjoy cooking eggs in many varied styles and think it speaks to the joys of a diverse culinary experience! With a bit of change in technique and ingredients you can make a completely different thing
@SRLevine@skinnylatte went to the replies to find my over medium cult and it delivered. Perfect choice for diners where you're not sure how they cook their eggs. If it's under cooked it's basically sunny side, if it's overcooked it won't be over hard.
@skinnylatte I've been to diners that had a short order cook who knew what "over medium" was and that's IMO the perfect fried egg. A vanishing breed, worth their weight in gold.
