     @kickingvegas a lot of noodles from China and Korea and Taiwan and Japan take the time to make proper soup.

     There’s a brand of instant Lanzhou noodles I get from China that is, I swear, better than the best rated beef noodle soup in San Francisco. Heheh

     This is not a ding on the restaurants, just that no one is going to bother making 16 hour soups in Asian restaurants here unless people really give a shit and will pay for it

     @kickingvegas yep, and the hyper-specialization just isn’t something that a restaurant can do outside of the home context. I get why, but I also wish I had more options to work with. Thankfully, traveling to South Bay or Fremont helps increase the options.

     @skinnylatte @kickingvegas I still kick myself for not taking a photo of a menu page at this one noodle place in Beijing. The English translation of the soup name on the menu was “Private Beef Noodle” and I have no idea how to find a recipe to recreate it, because searching for that phrase sure doesn’t yield results. :BlobCatPain:

     It probably goes without saying, but none of the Chinese restaurants in Fairbanks, Alaska have anything that even comes close. :blobcat_cwy:

     @mivox @kickingvegas nice! Lanzhou style is def one of the best styles. When you’re done you can try Taiwanese beef noodle recipes too. Also Google ‘ramenlord’ to find the best google doc in the known universe. A literal ramen manual

     But “Lanzhou beef noodles” does give me tons of recipe search results! :blobcatheart: (And I’m happy to simmer animal parts for days on end if it’ll give the the results I want. I can get a little obsessive about my soups. lol)
