#Today I tried my hand at making flaky buttermilk #biscuits again. Looks like I've finally got them just right! #protip freeze the butter then grate it into the dry ingredients.

Buy dehydrated buttermilk. It stores WAY longer then regular buttermilk. Once you add water, and add it to your dough, it is indistinguishable from regular buttermilk.
I do the same thing with milk.

If you have access to purchasing heavy cream, you can easily make buttermilk in a blender or in a jar if you want to go old school.

My ingredients: 3 cups flour, 2 tbsp baking powder, 1/2 tsp baking soda, 1 tbsp sugar, 1.5 tsp salt, 1.25 cups buttermilk, 1.5 sticks unsalted butter. I brushed w/buttermilk & topped with a wee sprinkle of Sicilian sea salt before baking for 20 minutes.

When I make biscuits, I do 1 tbsp vinegar and enough milk to make a cup (in whatever proportion you need from there for the recipe). Works well enough for us, as we never have buttermilk on hand in wet or dry form.

Yup I do the same. Lemon juice will also work in lieu of vinegar.
