I know that's what Intel's server and network-focused Atom processors target, but they are also pretty expensive since they cater to embedded, rackmount and/or industrial use with tons of I/O that I don't need.

From the iPhone X, I went to the 12 Pro Max (my mom is still using the iPhone X).
I still have my two previous MacBook Pro laptops (15" i7, 16" i9) that serve as backups, ad hoc servers, and testing random stuff. I don't plan on upgrading my 16" M1 Max until probably the M3 Max or later. If I want a smaller laptop to travel, I'll probably pick up a refurbished M1 MacBook Air.
My home servers are Dell outlet OptiPlex micros or one that I picked up from FreeGeek.

The Beta seems to be extremely memory hungry while having some interesting and sluggish rendering hiccups, including entering in newlines in multi-line text fields.
I suppose I'll have to wait until it is GA or upgrade to macOS Sonoma once it's GA and stable.
