Highest effort roast I've EVER made. Worth every minute!
Full brisket broken down to two vac sealed pkgs after smoke.
3 hour smoke, 60 hour souse vide @135, chill. Pat dry when ready to eat, 350 oven for 1 hour.

Best roast I've ever made!
