The fine dining hotel I bussed, expedited, and cooked in over the course of five years, our chefs would have fired every single "chef" that shows up on HK, on the first day. No standards, no plating, and if you fucked up more than one dish, you were fucking done, period. Scallops, always hosed. Can't make a basic risotto, fucking up meat temperatures, sending raw chicken out - you got one chance. After that, you were viewed as incompetent, and fired. I almost got fired one night for sending out a steak tartare that was 2oz light, because I wasn't paying attention.
