People screw up pork all the time with weird slow cooking methods that don't hit the whole pig to the necessary temps. You're far worse eating wild carnivores of any type than farmed pigs, as those are the number one source of foodborne illness for the same reason (improper cooking). I am a fan of pressure cooking followed by smoking or oven broiling to fix a crust. Gotta get the temps to the right point, but you can do that slow and low or medium and moderate just as easily.
