There is a difference between "virus survival" and "infective dose" but still this shows that there is a possibility for infection if you somehow ingest 8 week old bird poop.

I don't know what protection poultry workers are required to wear, but I'd hope gloves, mask, eye protection would be standard.

And yes, regular effective hand washing were appropriate.
