The donkey symbolism was probably due to a long running joke about Jews worshipping an ass (and the messiah arriving on one if Jews were deemed unworthy. Zechariah 9:9 vs Daniel 7:13, vis-a-vis Babylonian Talmud). That likely originated from Egypt where foreign deities were commonly associated with Seth-Typhon (depicted as donkey headed), and since the Alexandrians used it as a way of retorting against the anti-Egyptian slander from Jews about the Exodus which never happened historically.
