Analog ones sometimes use delay lines in the signal path, undelayed version for triggering, delayed version is the main signal, so you can trigger everything before the signal arrives. In digital scopes, everything is always on, writing data to a ring buffer. If a trigger arrives, a small window of signal data before and after the event gets saved. Without a trigger, the signal is overwritten after several nanoseconds.
