It's no accident that Americans eat a lot of corn, squash, and beans, since it's exactly what the natives learned grow well together here. That and the royal court sets the fashion for everyone else, so if the ruler is a Moor, he'll want moorish dishes. French cooking wasn't as distinct until Louis XIV became obsessed about showing it off... then it filtered down to everyone else.
