- Embed this noticeUntil the early 90s, a chef was a cook who showed talent and made it up the ranks under the tutelage/patronage of a real chef.
That new chef, having paid his dues/made his bones for years - sometimes decades - would then be sent to "finishing school", like Escoffier, or Culinary Institute, to learn the economics and management side of things, and how to properly maintain the infrastructure of a full kitchen.
There was no such thing as a 22-year old "chef". That was not a thing. You're a fuckin' cook. Get over yourself. I am a damn fine cook and I will jokingly call myself a chef, but I know better. I've worked for real, serious chefs.
Gordon Ramsey is entertaining, but he should be stoned to death by actual chefs, for Hells Kitchen, and Master Chef.
