Goat is underrated. The "gamey" taste associated with it is a product of age and feed. Muslim customers will often buy older goats since they like it. But conventionally, you butcher within a year and also consistently feed something like barley, which considerably improves the flavor. I've had goat ice cream, and it tastes great.
