@colinburgess those noodle shops in particular are much better than their competitors and the only ones I would say are comparable to options in Asia. Same with supreme. Which is why people line up for a taste of home. It’s also a different food culture (waiting for food is a thing, and our social lives center on the procurement of food with friends and family). My mother will happily stand in line for an hour for her favorite noodles at a hawker stall. Trying to get her away from it or suggesting she eat at another one will led to being disowned.
