    Ok I take back what I said about ‘New American food’. I simply don’t like it in California. I like it in New Mexico. My first meal: they gave me smoky Fresno peppers. To eat. The beans have smoke and flavor and depth.

    Depth.. that’s what I miss from ‘new California’ food.

      Maybe I would like new Californian food if my home cuisine wasn’t one of the best at ‘take a simple thing, lightly season, lightly cook, focus on flavors and let them shine’ (Teochew food is entirely like that, even in home cooking). So I find the Bay Area new California style food just kind of childish and not interesting.

      But then coz that’s my home food, I do flavor-maxxing in every other cuisine.

      @skinnylatte I don’t know why, or exactly how, but their food is unlike anyone else’s. And it’s so much better than most food that sounds similar. Probably that it’s more connected to indigenous food culture than most other American food

      If so, it is well worth the trek to go to https://indianpueblokitchen.org/our-menu/

      (and the museum and cultural center there is AMAZING)

      I grew up there and I would put NM cuisine up against any other - there are regional differences within the state as well. Albuquerque food is not the same as Las Cruces, or Santa Fe, or Taos. And the Pueblo food adds à-whole-nother layer.
