I've been craving some very specific foods lately here in the cold and dark Northern Hemisphere, so I put on a big pot of congee tonight, with ginger, cinnamon, shiitake mushrooms, jujubes, goji berries, poria (/fu ling), and thin slices of honey-fried licorice root. It should be epic and I can't wait to eat it.

@Fragglemuppet Rice porridge originated in India and is found by different names across South and East Asia. It's a wonderful, versatile food. It's also easy to make and a forgiving dish.
I make mine now with 1 cup jasmine rice, 1/4 cup glutinous rice, and 10 cups of water, in an instant pot, so I can set it and walk away. I add other ingredients to cook in or later as toppings, as the mood strikes me.
It's an absolute pillar of my winter diet. I warmly recommend it.

@Fragglemuppet Jujubes are also known as Chinese red dates, and the Latin namee is Ziziphus jujuba. As a fresh fruit, they have a thin red skin and are crispy, like a small, tart apple. When they are dried, the skin gets papery, the flesh gets dark, and they are quite sweet but drier than a Middle Eastern date.
They add a tiny bit of sweetness to a dish and a lot of micronutrients! They are also great for snacking on (high fiber, low calorie).
