Finally, after 9 months of practice, the perfect #sourdough loaf.
At least, perfect in all the ways I have been working on. The top crust is toasted, the bottom and sides are soft.

any particularly strong do's/don't's you've learned in this journey?
some of my struggles are altitude (2200m/7200ft) or humidity (15-20% this time of year) related but i'm sure i'm missing other stuff.
