You can give me a commit hash (which is comprised of all source code files plus commit history including authors and commit messages), but I can't confirm that the commit hash you gave me matches the code on your website. -

But on the second one, couldn’t you use a similar method that programs use to create signatures for programs? I think it has something to do with using the original source code as a hash or something? I forget how it all works.

You won't actually prove it's running that code at all, but you'll prove that there's no practical difference. -
