I'm not vegan, but we hardly ever buy eggs and my boyfriend can't eat butter, so it's the perfect recipe for that. I always halve it, but still managed to end up with 18 cookies today 😂 (I did tweak the amounts a bit because the PB was quite runny and it needed slightly more flour to be less sticky)
