I know of at least one reason why this might happen - basically, there can be hashtags in the post but outside of the post body, and Mastodon doesn't display them. they probably *are* getting pulled from a tag you follow, it's just that the tag itself is invisible to you! (the one time i've seen this it was spam, ymmv)
