Waikato is under-rated, esp. HamilTron, city of the future.

But being a one-eyed Cantabrian, I don't think you've seen Aotearoa until you've visited the mainland, Te Wai Pounamu. Especially the wild west coast, from the hippy sanctuaries of Motueka and Takaka in the north, to the glaciers and Fiordland in the south.

Auckland (although Waiheke is nice), Blenheim, and Queenstown.
