The reason people get cholesterol blockage is from eating excess sugar and bread. That causes glysification in your blood vessels (damage from inflammation). Cholesterol is how you body fixes that.
Eat nothing but sugar and that damage gets worse an worse until that cholesterol breaks the wall lining. But if you don't consume excess sugars/starches, the cholesterol will never damage anything. ... Also salt doesn't increase blood pressure.
I don't know how bad seed oil is, but from the original image, the chicken fried in non-seed oil (coconut, olive, etc.) is probably going to be healthier .. if it wasn't breaded in flour. That crispy starch exterior is what's bad. Grill your meets. Don't bread them.
