Apparently it's hard to get X to just be monochrome, like "Do this monitor as amber" and most monochrome displays are either e-ink or used medical gear. I *think* you could probably get a kinda monochrome display by patching EDID (which is actually doable; I had to for an old monitor that pretended to have speakers but did not) but I haven't tried that.
