You can make foods that last a LOT longer than canning, it's fairly fool proof for food safety since it's dry, and it can take up less space and weight. You can buy the mylar pouches like they use for Capri Sun drinks made for freeze dryers for fairly cheap as well. My buddy has freeze dried everything just for fun and even stuff like homemade spaghetti sauce comes out great.
