NextGen Cookbook :orangewine:Well this turned out even better than expected. The champagne sabayon is a fantastic alternative to hollandaise sauce, much lighter and so elegant. In fact, it's our new favourite. It doesn't have to be champagne either, other sparkling wines or white wines also work. #Recipe soon.
