As an average/petite sized woman who baked commercially for several years this makes sense to me. It is physically demanding work and all equipment is sized for average build males.
Anecdotally... I've been doing "all the things" in the kitchen since before my solid memory even really begins. Was developing my own recipes and honing techniques/processes by the time I was 10.
Most people tell me I make the best *everything* and they're not lying. I have a gift for it. An obvious God-given talent.
But when it comes to teaching other people how to make what I make, scaled for production and to a very exacting standard... men are better at it. It's just how it is. They pick it up quick and throw it down RIGHT.
I trained my younger brother to pick up some of my production work for a while when he didn't have other work lined up and I needed help, and he absolutely crushed it. Better within a couple weeks than the girls I'd trained for months. :acat:
