Back in the 70s/80s, when Mainland China became relevant and displaced Taiwan on the global stage, media and governments switched from using Peking to Beijing, and now everyone calls it Beijing. but if you order roasted duck with condiments, restaurants will still call it Peking Duck to this day

it'll be interesting to see decades from now tbh if i order rolled chicken cutlet with herbed butter whether it'll be Chicken Kiev or Chicken Kyiv tbh
