There's also something about signalling that "food processors" are a desired resource, so we should make more of them.

If they are all snapped up by rich types, that's a different matter, and things can be done to...discourage...such behaviour.

(Also worth saying that I don't think markets are *perfect*, and that there are situations i dont think theyre appropriate)
