@Sophistifunk Olive oil is fine for all of these things. Don’t believe the silly ‘smoke test’ - the smoke point is not the indicator of it becoming carcinogenic/toxic, as proven by science. It is actually better at handling temperature than most other oils. Agreed, animal fats are also great: tallow, duck fat, lard.
